Vegetarian Enchiladas Recipe

How To Make Vegetarian Enchiladas Recipe | Vegetarian Enchiladas Recipe | Mexican Recipe

Ingredients:

  • For the filling:
  1. 1 tbsp olive oil 
  2. 1 tbsp chopped garlic 
  3. 3 white spring onions chopped 
  4. 1 large green capsicum chopped 
  5. 1 cup Rajma beans (soaked overnight & boiled in salted water till soft) 
  6. Salt to taste 
  7. 1 tsp sweet paprika 
  8. 1 tsp cumin powder 
  9. 1/2 cup onion greens
  • For the Ranchero sauce:
  1. 1 tbsp olive oil 
  2. 2 large red capsicum 
  3. 5 large tomatoes 
  4. 1 tbsp garlic
  5. 2 white spring onions 
  6. 1 tbsp refined flour 
  7. 4 tbsp malt vinegar 
  8. 2 tbsp sugar 
  9. Salt to taste 
  10. 1 tsp cayenne pepper 
  11. 1 tbsp parsley 
  12. Few leaves of basil 
  13. 1 cup Water 
  14. 1 tbsp habanero sauce/any other smoked spicy sauce
  • For the assembly:
  1. 6 nos tortillas discs 
  2. Mozzarella cheese as required
  • For garnish:
  1. Parsley sprigs 
  2. Olive oil

Method:

  1. In a pan add olive oil, garlic, whites of spring Onion, capsicum, boiled beans ( boiled with salt & water ) add some salt, sweet paprika and cumin powder. Stir it properly
  2. Mash the beans with spoon or potato masher.
  3. In a pan add olive oil, red peppers, crushed garlic, whites of spring Onion, tomatoes, flour, malt vinegar, sugar, salt, cayenne pepper, parsley and fresh basil.Also add little bit of water.
  4. Blend the mixture and keep it on flame for 2-3 minutes and add habanero sauce.
  5. Take a baking pan and add the ranchero sauce in the bottom.
  6. Take the tortilla disc and the bean mixture, to which add onion leaves.
  7. Fill the disc with bean mixture and roll them. Keep them in the baking pan over the ranchero sauce.
  8. Top it again with ranchero sauce. Add cheese slice ever the baking pan.
  9. Keep it in oven for 10 minutes on 180 degrees
 Vegetarian Enchiladas is ready to be served!
