Chicken Dum Biryani Recipe

Ingredients:
800 gms. ChickenFor Marination:
- 1 cup curd
- 1 tsp. Salt
- 1 tsp. Red Chilli Powder
- 1 tsp. Turmeric Powder
- 1 tsp. Coriander Powder
- 1 tsp. Cumin Powder
- 1 tsp. Garam Masala
- 2½ tbsp. Ginger-garlic paste
- 3 green chillies, sliced
- 1 Cinnamon stick
- 1 Star Anise
- 1 Mace
- 1 Black Cardamom
- ¼ tsp. Green Cardamom, ground 8-10 Black Peppercorns 4-5 cloves
- 1 tsp. Ghee Coriander Leaves, chopped Mint Leaves
For cooking rice:
- 1 stick Cinnamon
- 1 Mace
- 1 Star Anise
- 2-3 Black Cardamoms
- 5-6 Cloves
- 4-5 Black Peppercorns
- ½ tsp. Green Cardamom
- 1 tbsp. Ghee Salt to taste 300 gms. Basmati Rice
For frying onions:
- 1 kg. Onions, sliced
- Oil for frying
Layering:
- Chicken
- Ghee
- Coriander Leaves
- Mint Leaves
- Fried Onions
- Basmati rice
- Food colouring
- Saffron milk
- Green Chillies
Method:
- Marinate the chicken in a bowl by adding the marination ingredients to it and keep aside for 60-90 minutes.
- In a saucepan, take water and add cinnamon, mace, star anise, black cardamom, cloves, black peppercorns, green cardamom, ghee, salt and bring to a boil. Once the water starts to boil, add the basmati rice to it. Drain water once cooked.
- Once the chicken is narinated properly, cook it in a wok for 15 minutes.
- In a pot layer the cooked chicken with ghee, coriander leaves, mint leaves, fried onions, basmati rice and again with ghee, food colouring, Saffron milk, mint leaves, fried onions and green chillies.
- Seal the pot with wheat dough and cook on low flame for 5 minutes.
- Take a pan and keep it on low flame and place the pot on the pan and cook for 10 minutes.
Chicken Dum Biryani is ready to serve!
